What foodie among us doesn’t love watching the Food Network? Who among us doesn’t salivate over the gastronomic creations and, even more so, the gleaming, decked-out kitchens, the ease with which the stars whip up their homey, yet inventive meals, and the stress-free environment in which they serve them to their guests.

 

I love watching the Food Network’s porcelain-perfect cooking, and, in particular, Everyday Italian with Giada DeLaurentis. She is perfectly made up, coiffed, and dressed, and her football-field-sized kitchen is immaculate and stylish. Not only that, but the woman features mascarpone, whipped cream, and crème fraiche in nearly every show, which makes me feel like we are culinary kindred spirits. Word, Giada, word.

Fettuccine with Creme Fraiche Sauce

Have you ever considered how nearly impossible it is to do all of the things that we should/want/have to do in any given day? Most of the people I know dedicate 10-12 waking hours each workday to their profession, including travel time. Assuming 6-8 hours of sleep, that leaves precious little else for personal hygiene, eating, exercise, staying current on world affairs, having a hobby, talking to your significant other, etc. And, what’s even crazier, is that I’m here beseeching you to make homemade meals, buy local & organic, and add other inconveniences to your life in the name of good eating. It’s madness, but I will try to rectify the situation.

 

The ‘Weeknight Dinners’ category contains recipes that can generally be prepared – soup to nuts – in a half hour or so and require few, if any, ingredients that would warrant a trip to the store. Today’s recipe, however, is the mother of all lazy day dinners. Born from the remnants of the Beef Tenderloin with Crème Fraîche Sauce recipe, it is essentially the crème fraîche sauce over pasta.

A perfect alternative to a bacon & eggs brunch.

 

 

Brunch is undoubtedly my favorite meal, and while I have a pretty exclusive relationship with Bacon & Eggs, I do stray from time to time, but only for a really spectacular alternative, and I have it here with these Apple & Crème Fraîche Pancakes.

 

This pancake recipe evolved out of a recipe by the inimitable Ina Garten, Banana Sour Cream Pancakes, in her Barefoot Contessa Family Style cookbook. However, a little tweaking, a missing ingredient or two (which, I’m convinced, is the impetus of most recipe evolution), and a desire to rid myself of a few soon-to-be-dated items yielded this fantastic recipe.

 

It is a composition of stunning contrasts, which tend to make the most interesting dishes. The lemon and crème fraiche add a tang to what is generally a very mild, peaceful dish. The heavy dairy component gives a velvety weight to what is still a very fluffy pancake (the pictures don’t do justice to the pancakes but do illustrate how high they rise).

Valentine's Day Dinner... There's nothing like a rare tenderloin to spark the flames of romance.

 

Recessions seems to come at the most inconvenient times, don’t they?

 

While we all feign contempt for this, the most unapologetically commercial of holidays, there is no ignoring Valentine’s Day… not when your darling has been obsessively forwarding you links to his or her latest desire.

 

While the idea of going out for a romantic (read: budget-busting) dinner á deux seems rather ill-advised in these economic times, an at-home version can easily meet, or even exceed, the experience at a gorgeous restaurant.
